Ideas:

Ss choose level of scaffold for practical investigation (with method and results, then with method only, then blank)

Teaching a concept: whole class teaching, then give students options for tasks (stay with teacher, manipulative, extensions questions)

Use scaffolds that progress. Start with heavily scaffolded, then partly scaffolded, then write your own from scratch eg. to learn about Scientific method. Always have all three options available to students to access so they can progress at their own level. 

Use multiple types of tasks to develop and reinforce understanding ie. whole class teaching, online learning eg Stile, hands on tasks, investigations, big problem solving, individual learning, mixed ability groups...Mix it up to cater for different learning styles.
